ABOUT BAR 1859
At Bar 1859, we celebrate the rich history of our community and the legacy of Salado College, which began on October 8, 1859. It all started with a gathering at Salado Springs, where prominent leaders from Bell County united with a vision to create a high-quality educational institution.
Through the formation of the Salado College Joint Stock Company, they raised $5,000, paving the way for a brighter future. Colonel Robertson generously donated 100 acres to support this ambitious project—10 acres for the college and 90 acres for families moving to the area. This initiative was instrumental in founding the town of Salado, a testament to the determination and entrepreneurial spirit of its early settlers.
We couldn’t think of a better way to honor this legacy than by naming our new cocktail lounge Bar 1859. Here, we invite you to relax, enjoy hand-crafted cocktails, and connect with friends in a space that embodies the grit and creativity that shaped our village. 1859 was indeed a remarkable year, and we’re proud to continue its spirit in our vibrant community gathering place.

MEET THE OWNERS
The Eddy family—Chuck, Tracey, Travis, and Molly—are proud, third-generation Salado locals with deep roots in the community and a passion for entrepreneurship. As a family of builders, designers, and innovators, they shared a dream of opening a bar and restaurant in their beloved town, and Bar 1859 is the result of that vision. Molly and Travis, owners of a successful local construction company, took the lead in bringing the bar to life—Travis overseeing the construction of the space, while Molly designed the interior with a keen eye for style and comfort. Chuck, known for his craftsmanship, designed and built the outdoor patio and custom liquor cabinets, adding a personal touch to the space. Tracey created the food menu and manages the day-to-day business operations, ensuring every guest enjoys exceptional service and a memorable experience.
Whether you're grabbing a drink after work or enjoying a night out with friends, the Eddy family is proud to welcome you to Bar 1859. Their favorite drinks reflect their unique personalities: Travis enjoys a whiskey neat, Molly loves a classic Old Fashioned, Tracey prefers a crisp glass of white wine, and Chuck cheers with a Royal Street Refresher.
